Paleo Pancake and Waffle Mix

2 Large Eggs
1/4 Cup Agave Nectar or Honey
1 Tbsp Vanilla Extract
1/4 Cup Water
3/4 Cup Almond Flour
3/4 Cup Almond Butter
1/2 Tsp Sea Salt
1/2 Tsp Baking Soda
1 Tbsp Arrowroot Powder
2 Tbsp Coconut Oil
1 Tsp Cinnamon

 

Using a blender/Vitamix (highly recommend) combine eggs, agave,vanilla and water, process on high for about 1 min. until smooth. Add Almond flour and almond butter, salt, baking soda, cinnamon, coconut oil and arrowroot powder, and blend until thoroughly combined. Add in Extra water until you get the consistency you want. I prefer my mix thinner.

 

Heat up some Coconut oil on a griddle and ladle the batter onto a hot pan and enjoy!

I topped mine with blueberries. I cooked about 2 cups of frozen berries, added some honey to taste. These are the best I have tasted so far! I hope you guys like them!!

Pork and Brussel Sprout Stir Fry

 

Ingredient List:

4x Beef/Pork Sausages-Sliced (Purchased at http://www.deerviewmeats.com)

4 Pieces of Bacon-Chopped

1 Whole Yellow Onion-Diced

2 lbs of Brussel Sprouts-Cut in Half (Purchase a 2lb Bag at Costco)

1/4 Cup of Chicken Stock

Salt and Pepper to taste

Cook Bacon until crispy. Leave bacon fat in pan and add all of the sausage. When the sausage is cooked fully, add in your diced onion. Sauté everything together until onions are caramelized. Add in all 2 lbs of Brussel Sprouts and stir everything together. Once everything is mixed poor in you chicken stock. Put a lid on your pan and let the brussel sprouts cook until tender. keep an eye on them and stir them every couple of mins. Remove the lid and let any extra juices evaporate. Add Salt and Pepper to taste.

Makes about 4 Servings.

Takes 20 min to make.

Oven Fried Chicken

1.5 cups almond flour
2 TBSP BBQ chicken seasoning
2 TBSP grated parmesan cheese (optional)
½ tsp dried thyme
½ cup coconut flour
2 beaten egg whites
12 boneless skinless chicken thighs

Preheat oven to 400F.  Line cookie sheet with parchment paper.  Mix almond flour with 1 TBSP of the BBQ chicken seasoning, parmesan cheese, and thyme.  Mix well and set aside.  In another bowl, mix together coconut flour and remaining BBQ chicken seasoning and set aside.  Place egg whites in another bowl.  Working one chicken piece at a time, roll it first in flour mixture, then dip in egg.  Shake off excess egg, then coat chicken in seasoned almond flour.  Place on baking sheet.  Bake for 50 mins
