Paleo Pancake and Waffle Mix

2 Large Eggs
1/4 Cup Agave Nectar or Honey
1 Tbsp Vanilla Extract
1/4 Cup Water
3/4 Cup Almond Flour
3/4 Cup Almond Butter
1/2 Tsp Sea Salt
1/2 Tsp Baking Soda
1 Tbsp Arrowroot Powder
2 Tbsp Coconut Oil
1 Tsp Cinnamon

Using a blender/Vitamix (highly recommend) combine eggs, agave, vanilla and water, process on high for about 1 min. until smooth. Add Almond flour and almond butter, salt, baking soda, cinnamon, coconut oil and arrowroot powder, and blend until thoroughly combined. Add in Extra water until you get the consistency you want. I prefer my mix thinner.

Heat up some Coconut oil on a griddle and ladle the batter onto a hot pan and enjoy!

I topped mine with blueberries. I cooked about 2 cups of frozen berries, added some honey to taste. These are the best I have tasted so far! I hope you guys like them!!
